Roasted potatoes wedges
1 bag or 1 1/2 lbs medium potatoes
refined coconut oil
1 TBS smoke paprika
1 TBS nutritional yeast
1-2 TBS garlic powder
salt and pepper to taste
1) Pre-heat oven to 425°.
2) Slice your potatoes into wedges by first slicing them in half, length-wise. Then slice into thirds.
3) Put all wedges in a bowl with melted refined coconut oil and spices. Toss until well covered.
4) Place on cookie sheet and bake for about 25 minutes.
Test 2 or 3 of the largest ones to make sure they are cooked through. If they have nice, crispy, brown edges they are probably done.
These wedges are awesome because you can chop them up smaller and have them for breakfast, have them as a side as fries, or have them as an entrée topped with chili, cheese and sour cream.
